I'm going with Option B. It just makes sense that business hours would be part of the Activity Policies, you know, since they're related to the activities happening in the contact center.

Option D sounds promising, 'Contract Availability' could be the place to define business hours. Although, I'm kind of hungry, so my brain might not be functioning at full capacity right now.
