I'm a bit puzzled. Why not just use option D) and configure the product categories picklist field on the product? Seems like the easiest solution to me.

C) Create a custom field on the Opportunity and map the two fields. This is the most straightforward way to satisfy the requirement without having to worry about any workflows or complex configurations.

I disagree, I believe creating a custom field on the Opportunity and mapping the two fields would be a better option for flexibility.
