I'm going with C) CREATE STREAM WITH and CREATE TABLE WITH . Seems like the most straightforward way to create new Kafka topics through KSQL.

D) CREATE STREAM AS SELECT and CREATE TABLE AS SELECT - That's the only way to write to Kafka through KSQL, right? The other options are more for managing and inspecting KSQL objects.

Yes, that's correct. CREATE STREAM AS SELECT and CREATE TABLE AS SELECT are used to write to Kafka through KSQL.
