Deleting the DB instance and creating a new one? That's overkill! I'm pretty sure there's a more efficient way to handle this issue.

Single AZ and then back to Multi-AZ? That sounds like a lot of extra work. I don't think that's the best solution here.

Hmm, I'm not sure about that. Disassociating and reassociating the DB Engine sounds like it could be risky. I'd rather stick with a more straightforward approach.

I think option A is the way to go. It's the simplest solution and will get the Read Replica up and running again quickly.
