Aha! The 'Use in Product Tab' property needs to be set to 'yes'. That's got to be the solution. I can practically see the attribute appearing on the Additional Information tab now.

The attribute must be moved to the specific group in the attribute set? Seems like an easy fix, but I wonder if there's more to it than that.

I'm not sure, but maybe setting the attribute property 'Use in Product Tab' to 'yes' could also work.
