I'm not sure why anyone would choose Option A or C. Those files don't seem to be related to the task at hand. Option B is the way to go.

Option B seems to be the right choice. The question mentions creating a custom EAV attribute, and the 'extension_attributes.xmi' file is the correct place to define and register new attributes.
