Wait, so I need 4 store views just to handle the currency switch? That seems like overkill. I'm going with A - 1 website, 1 store, 2 store views should be enough.

I think the answer is B. Having 1 website, 1 store, and 4 store views would allow you to display the catalog in both English and Spanish, as well as switch between US Dollars and Mexican Pesos.

I'm not sure, but I think having multiple websites and stores would be unnecessary complexity. A) sounds like the right choice.
